Grilled Sweet Potato Fries
No matter the weather, I am always looking for a good grill recipe! Cooking on the grill means less dishes which is always a plus.
This Paleo friendly recipe, is a great side dish to any meal and is also kid friendly. Sweet potatoes are also a healthy side dish option packed with nutrients such as vitamins C and A, potassium, and beta-carotene. The key to making the fries the right texture, is to pre boil them before adding them to the grill. After 15 minutes boiling on the stovetop they should be tender but still firm and able to cut into wedge shapes.
After boiling and cutting, you can then toss these beautiful potatoes in a mix of salt, garlic, olive oil, and thyme. Throw them on the grill and in about 6 minutes you have wonderful sweet potato fries!
For dipping, this recipe recommends a garlic paleo aioli which you can buy premade! You can also make your own aioli by mixing mayonnaise with a variety of your favorite ingredients such as sriracha sauce, smoked paprika, and garlic.
