Dairy Free Dinner in 15 minutes!
When I'm in a rush to cook for my family of 5, this is hands down my favorite go-to recipe! The key ingredients in this delicious recipe are coconut milk and curry paste.
If you look through the aisles at Kroger you will find a variety of curry pastes but my favorite is the Thai Kitchen brand green curry paste! It is Vegan and only has 7 ingredients: green chili peppers, garlic, lemongrass, spices, salt, shallot and lime peel.
Cooking for kiddos and worried about spice levels? Not a problem, you can easily adjust the heat depending on how many tablespoons you use of the paste. This recipe calls for 2 tablespoons for example but you can easily add more or less depending on your preference!
As for the protein, this recipe includes shrimp which are quick and easy to make! You can also substitute the shrimp for more veggies, chicken, or tofu! The sauce is so delicious it tastes great on anything.
An ingredient, I wasn't as familiar with is Coconut Aminos All Purpose Seasoning Sauce. This sauce is similar to soy sauce but has a lighter color and tastes sweeter. I definitely recommend having it on hand in your kitchen!
Serve this dish over white or brown rice and you have a healthy dairy-free meal your entire family with love!
